Ingredients and spices needed to prepare Whole Vegetable Japchi:

  1. glass noodles/sweet potato noodles
  2. Seaweed slices or just wet seaweed (I included both)
  3. Tofu skin slices or ferm tofu
  4. chopped carrots
  5. school sniper
  6. spices
  7. 1-2 tablespoons light soy sauce, low sodium
  8. 1 tablespoon of honey
  9. 1 tablespoon of water
  10. 1 tablespoon sesame oil
  11. 1 tablespoon sweet vinegar
  12. 1 teaspoon garlic sauce (optional, included in this recipe)
  13. salt and pepper to taste
  14. Decorate
  15. Roasted sesame seeds

Instructions for making the whole vegetable jibchi

  1. Flatten all dry ingredients except tofu skin. Important: To prevent glass noodles from sticking, rinse noodles with cold water about twice after cooking. Spread with a little sesame oil and mix well. Place all cooked ingredients together in a large mixing bowl.
  2. Fry tofu or bean curd skin in a lightly oiled pan. Add to bowl with all other ingredients.
  3. Mix all the liquid spices, salt and pepper. Set your preferred level of salt or sweet. I personally would prefer it not to be too confusing. I added 1 tsp chili garlic sauce for extra heat and umami, which is optional.
  4. Mix the liquid with the remaining dry ingredients and start mixing. Fry the mixture in a lightly oiled pan for 2-3 minutes, or you can eat it as is without frying. Let stand 5 to 10 minutes before serving.
  5. Serve and decorate with sesame. Have fun!

While it's far from the end, it's good food for thought. The hard truth is that it gets your creative juices flowing so you can whip up great family meals without skipping the intense cooking.
