  2. 2 cups flour/wheat flour

  13. One tablespoon of amchur/mango powder
  14. 8 cups boiled peas
  15. spoon coriander / coriander powder
  16. 1/4 cup chopped cilantro
  17. tsp red chili powder or as much as you like
  18. 1/4 cup roasted peanuts

Instructions for making potato samosas

  1. Take the flour/wheat flour. Make a hole in the middle and add oil, salt, celery/thyme. Mix the ingredients together. It should have the consistency of wet sand. Add the water little by little and add the flour and mix well. Separate the flour and cover with a lid for an hour.
  2. Boil potatoes. Crush and add salt, chili powder, cumin powder and amchur powder. Add boiled peas. Also add chopped cilantro and roasted peanuts.
  3. Bring the pan to the oven/gas. When hot, add oil. Add the cumin seeds to the boiling oil and spread. Add the potato mixture and bring to a boil a little. Turn off the heat and let it cool.
  4. Now shape the dough into a ball and roll it into an even layer. Divide the flour into two parts.
  5. Make a cone out of half the sifted flour. Take the water in your hand and place it on the edge. This will help seal the edges of the samosa. Now weld the edges. Make a crease on the opposite side of the edge. Now fill the samsa with water again. Now put the peas into the cone first. This will help maintain the conical shape of the samosa. Now add the filling up to 3/4 of the cone.
  6. Now arrange the samosas flat side down on a plate. This will help keep the shape of the samosa.
  7. Now fry the samsa over medium heat until golden brown. Serve hot with sour chutney and coriander.
