  1. Sauté the onion, green onion, carrot, ginger and garlic in a few tablespoons of coconut oil over medium heat until soft. Add the sweet potatoes and a pinch of salt and pepper. Sauté for a few minutes, then add the peanut butter and tomato paste with 1/2 cup of water. Mix well, then add the coconut milk, bring to a boil. Add the sauce and adjust the seasoning by adding more curry powder, garam masai and mustard greens. Add sauce. Cover and cook over low heat until the vegetables are soft. Adjust seasonings.
  2. Add royal peppercorn seasoning to taste. Serve with chopped cilantro and roasted peanuts.
