- Boil 1 1/2 tablespoons of chicken powder
- 3 teaspoons heaping tomato paste
- 2 teaspoons dried oregano
- 5 cups of water
- 4-5 stems, peel and cut the roots
- 1 additional cup of cold water
- 3 tablespoons cornstarch
- 20 stuffed allspice olives
- 4-5 Yukon Gold Fries
How to Make Puerto Rican Chicken Stew Pollo Guisado (Crockpot Version)
- Wash and dry the chicken. Spice up all the sides with all-purpose Goan flavors. Invert a large skillet over medium-high heat and brown on both sides to form a golden crust on the skin. But don't cook. (Note: Don't worry about slicing, as once a golden crust forms, it will automatically rise from the top of the pan in a few minutes.) Place the chicken fillets in the dutch oven. Note: Since this recipe is doubled, I usually have to make two batches.
- Bring the oil to a boil. Fry the sofrito for a minute or two. Put the tomato paste in the pot. Mix and heat. Grate the mixture and slowly pour in the water. Then add the chicken stock, can of sagan, thyme and bay leaves. Spray the drops from the bottom of the pan.
- Pour the mixture into the dutch oven. Sprinkle olive mint on face. Cook on high heat for 3 hours. Put down the pottery. Add the potatoes and carrots. Cook the vegetables for about an hour until tender.
- Finally, mix a cup of cold water and cornstarch. Pour into saucepan, then stir mixture. It will be a bit thick. Served over rice.
